Fennel bulb, bacon and mature cheddar bake

This fennel bulb, bacon, and mature cheddar bake is a quick and easy dinner sure to please the entire family!

The smokiness of the bacon is perfectly complimented by the creamy cheddar, and it’s only made better by the fact that it takes less than an hour to prepare. 

Fennel bulb, bacon and mature cheddar bake


Serves: 4

Cooking Time: 45 mins

Ingredients

  • garlic clove
  • a little butter
  • 250g diced streaky bacon
  • 1 onion
  • 3 fennel bulbs
  • 150g mature white Cheddar
  • 15ml (1 tbsp) chicken stock powder
  • 250ml (1 cup) fresh cream
  • 100ml milk

Instructions

Preheat the oven to 180°C. Rub a medium-sized casserole dish or ovenproof pan with a garlic clove that has been sliced in half and grease the dish generously with butter. Prepare your ingredients by frying bacon until crispy, peeling and finely slicing the onion, finely slicing fennel bulbs and grating mature white Cheddar. Layer half of the onion and fennel bulb in the roasting dish, sprinkle over half of the cheese and the chicken stock powder. Add the remaining onion and fennel bulb, top with the remaining cheese and sprinkle the crispy bacon over. Pour over fresh cream and milk before placing in the oven to cook, about 30 minutes, or until the onion and fennel is soft. Serve warm.
